Ingredients
1 Tbsp | Canola oil |
1 | Onion |
2 kgs | Chicken (Main) |
400 g | Coconut milk |
1 tsp | Salt |
1 tsp | Chilli powder |
1 tsp | Ground cumin |
1 tsp | Ground ginger |
1 tsp | Fennel seeds |
250 g | Button mushrooms |
2 Tbsp | Lemon juice |
Directions
- Dice and saute onion in oil, until tender. Place in a slow cooker.
- Tie or truss chicken and place on the onion.
- Halve mushrooms and combine all the remaining ingredients, pour over chicken.
- Cook on high for five to six hours or low for eight hours.
Great served with naan bread or rice.
