Recipe: Rocket and pear salad with bacon, walnuts and blue cheese

This is an elegant, grown-up salad that can be prepared in just a few minutes. Perfect for impressing guests when you are short on time!

Rocket, pear, bacon, walnuts and blue cheese salad recipe

Serves 4

Ingredients

125g streaky bacon

2 tsp runny honey

⅓ cup extra virgin olive oil

1 Tbsp white wine vinegar

2 pears

3 cups baby rocket leaves

100g crumbly blue cheese

¾ cup walnuts, lighted toasted

Method

1. Fry off the streaky bacon until crispy and golden in a non-stick fry pan. Set aside.
2. Mix the honey, extra-virgin olive oil and white wine vinegar together in a small bowl.
3. Leave the pears unpeeled, remove the cores and slice thinly. Place pears in a bowl and pour over the dressing.
4. Combine rocket leaves, crumbled blue cheese and walnuts on a serving platter.
5. Chop the bacon and add to the salad.
6. Scatter salad with ripe pears, drizzle over extra dressing and serve.

Note: You can omit the bacon if you want to make a vegetarian version of this salad.
