Recipe: Hot honey brie flatbreads

If you want to serve up something tasty as an appetiser or with Christmas drinks, these hot honey brie flatbreads feel sophisticated but are easy to make. Using bought flatbreads for the base is a simple solution when you are busy with a giant to-do list for Christmas.

Hot honey brie flatbreads

Serves 4

Ingredients

2 store-bought flatbreads

1 brie cheese (100-125g), sliced

⅓ cup sultanas

⅓ cup walnut pieces, chopped

1 Tbsp olive oil

4–5 sprigs thyme leaves

For the hot honey drizzle

¼ cup runny honey

¼–½ tsp chilli flakes (adjust to heat preference)

Method

1. Preheat the oven to 200C. Line an oven tray with baking paper.
2. Place two flat breads on the lined tray. Arrange the brie slices, sultanas and walnuts over the top of them. Drizzle with olive oil and scatter thyme over the top.
3. Bake in the oven for 8 minutes or until the cheese melts and the topping starts to brown.
4. While the flatbreads are baking, make the hot honey drizzle. Mix honey and chilli flakes in a small heatproof bowl. Cover it with a small heatproof plate and microwave for 30 seconds until the honey is heated.
5. Cut each flatbread into 4-5 slices and arrange on a platter or board. Drizzle with the hot honey and serve garnished with some extra herbs.
