Serves 4
1 cup self-raising flour
1/4 tsp salt
1/2 cup brown sugar
60g butter, cubed
2 Tbs milk
1 egg
Sauce
30g butter
1/2 cup brown sugar
1 tsp vanilla extract
4 Tbs golden syrup
Juice of one lemon
3/4 cup water
1 Sift the flour and salt into a bowl. Stir in the sugar.
2 Using your fingertips, lightly rub in the butter.
3 Whisk together the milk and egg then add, gently mixing until just combined.
4 Make the sauce by simmering all the ingredients together in a large saucepan. Drop small spoonfuls of the dumpling mixture into the sauce. Turn the heat to low and cover the saucepan. Cook for 20 minutes then serve hot with cream.
