crumbed chicken tenders
4 wraps
1 cup hummus
2 cups baby spinach leaves
1 medium cucumber, peeled and diced
½ cup feta cheese, crumbled
½ red onion, finely chopped
4 Tbsp chopped sundried tomatoes
4 Tbsp sliced black olives (optional)
Method
- Cook the chicken tenders according to the packet instructions and set aside.
- Lay the wraps on the benchtop and spread each one with a good layer of hummus. This will help stick all the other fillings to the wrap.
- Scatter the spinach leaves over the hummus and then top with a sprinkling of all the other fillings. Place the chicken tenders over the top of the filling.
- Fold in the ends, then roll up the wraps. Eat straight away or wrap in baking paper to keep them fresh for later.
