There’s nothing like a simple pasta dish for a quick weeknight meal.
This smoky bacon fettuccine has the veggies built in, so you don’t need to cook anything extra. Even better, you have minimal dishes to deal with afterwards.
Bring a large pot of salted water to the boil and cook the fettuccine according to the packet instructions.
While the fettuccine is cooking, heat the oil in a large frying pan and cook the bacon until crispy. Add the garlic and cook for 1-2 minutes until the garlic is fragrant. Add the paprika and cook for a few more seconds, then add the tinned tomatoes, season to taste with salt and pepper, and bring to a simmer.
Once the sauce is at a simmer, add the frozen peas and cook for 4 minutes or until tender. Stir in the sour cream and cooked fettuccine and serve with some fresh parmesan grated over the top.

If the sauce seems too thick, thin it with a little pasta water.
