Use regular basil if your supermarket or greengrocer doesn't sell Thai basil.
|500 g||Beef mince (Main)|
|165 g||Thai flavour base|
|2 Tbsp||Fresh coriander|
|½ tsp||Iodised salt|
|2 Tbsp||Basil leaves|
|400 g||Mexican tomatoes|
|400 g||Hokkien noodles|
|130 g||Baby spinach|

- Mix lean beef mince, Thai flavour base, coriander, salt and basil together. Form tablespoons of mixture into balls. Thread three balls on to small skewers.
- Place on a baking tray and grill, turning often, for 15 minutes. Place tomatoes in a saucepan and heat through.
- Cook noodles according to packet directions. Place noodles and tomatoes in a serving dish. Scatter over spinach leaves. Top with meatball skewers.
