A tomato & cheese salad. Make small balls of mozzarella using a melon baller or cut into 1.5cm cubes.
|¼ cup||Basil leaves (Main)|
|1 clove||Garlic, crushed|
|3 Tbsp||Extra virgin olive oil|
|¾ cup||Cherry tomatoes, ripe (Main)|
|¾ cup||Buffalo mozzarella, small balls or cut into 1.5cm cubes (Main)|
|1 pinch||Chilli flakes|

- Whizz half of the basil with the garlic, salt and olive oil in a small food processor to make a dressing.
- In a bowl, combine the tomatoes, mozzarella balls, chilli flakes and the remaining basil. Add the salad dressing and stir gently to combine. Serve in individual glasses or bowls.
