Dressing
| 1 | Shallot, very finely chopped (Main) |
| 1 tsp | Black sesame seeds (Main) |
| 1 tsp | Runny honey |
| 1 Tbsp | Lemon juice (Main) |
| 3 Tbsp | Olive oil |
| 1 dash | Sesame oil, preferably toasted sesame oil |
| 1 serving | Sea salt and cracked black pepper |
Fish
| 2 knobs | Butter |
| 4 | Fish fillets, skin on, boned (Main) |
Directions
- Make the dressing, place the chopped shallot, black sesame seeds, honey, lemon juice, olive oil and sesame oil in a clean screw top jar. Season with salt and freshly ground black pepper. Place on the lid and shake well. Remove lid and taste adding more salt, if needed.
- Heat a large frying pan over medium-high heat. Add the butter and as it begins to sizzle place in the fish fillets, skin-side-down. Pan-fry until the skin it well browned then turn fillets and cook quickly to just cook the flesh.
- Remove fish from the pan to 4 warmed plates. Serve fish with the dressing and a green salad.
