This healthy chocolate mousse from Dr Libby is made with dates, cacao and coconut. Serves 2 to 4 people, and only takes about 5-10 minutes to make. This mousse is freezer friendly so can be made ahead of time.
|1||Coconut, flesh of a young coconut|
|2||Dates, pitted and roughly chopped|
|½ cup||Cashew nuts, raw|
|3 Tbsp||Cocoa powder (Main)|
|1 serving||Mixed berries|

- Place all the ingredients except the berries in a blender.
- Add enough filtered water to enable the blade to work effectively and process until creamy and smooth.
- Pour the mixture into attractive glasses (eg martini glasses or tumblers)
- Top with a mix of berries.
