Ingredients
3 | Avocados (Main) |
2 | Grapefruit, or 3 depending on size |
2 | Lemons, juice of |
250 g | Goat's milk cheese, kapati goats cheese available at supermarkets |
1 cup | Mint leaves, rinsed |
1 to drizzle | Extra virgin olive oil |
Directions
- Peel and slice avocado, squeeze the juice of two lemons over it and set aside.
- Peel and segment the grapefruit and thinly slice the cheese.
- Combine all ingredients, season and drizzle with a little extra virgin olive oil.
