Fresh berry cups with Pimms. Photo / Babiche Martens
Serves 12
500g strawberries, sliced 500g blueberries 500g raspberries 200ml Pimms 1/2 cup caster sugar 1 cup freshly squeezed orange juice, strained 1/2 cup fresh mint leaves, shredded Softly whipped cream, to serve
1 Combine the berries in a bowl.
2 In a second bowl, stir together the Pimms, caster sugar and orange juice until the sugarhas dissolved. Pour over the berries and leave at room temperature for 30 minutes. Add the mint.
3 To serve; spoon the berries and liquid into small glasses, top with a little whipped cream and serve with elegant spoons.
