25g butter
2 cloves garlic crushed
1 tsp chopped rosemary
2 each: oranges, large avocados
2 cups mixed baby salad greens
3 tbsp each: extra virgin olive oil, lemon juice
Method:
Rinse rice in cold water. Cook in boiling water until tender. Drain well and cool. Meanwhile, season prawns. Melt butter with garlic and rosemary in a frying pan and cook prawns until tails are pink.
Peel oranges and remove all the pith. Cut into cubes. Peel, stone and cube avocados.
Combine with rice and greens in a bowl and mix in oranges and avocados. Whisk olive oil, lemon juice and salt and pepper and stir through salad. Top with prawns. Serves 4
