Recipe: Longevity noodles with spicy pork

Longevity noodles (yī miàn) are a traditional dish for Chinese New Year and can be prepared with all sorts of meat and vegetable combinations. The long noodles symbolise a long, healthy life, and good luck and prosperity. Don’t cut the noodles - the longer they are, the more luck you’ll have!

Longevity noodles with spicy pork

Serves 4

Ingredients

400g thin egg noodles

1 Tbsp vegetable oil

350g stir-fry pork

2 cloves garlic, finely chopped

180g baby bok choy, halved lengthwise

100g white button mushrooms, halved

1 red capsicum, sliced

¼ cup water

¼ cup thinly sliced spring onions

¼ cup fresh coriander leaves

Sauce

3 tsp cornflour

3 Tbsp soy sauce

2 Tbsp ginger sweet chilli sauce

1 Tbsp rice wine

1 tsp sesame oil

Method

1. Make the sauce: Mix the cornflour and soy sauce together in a small bowl, then stir in the remaining ingredients.
2. Place the pork slices in a shallow bowl. Add 2 teaspoons of the sauce mixture and toss through the pork.
3. Heat the oil in a large wok over high heat. Add the garlic and sizzle for a few seconds. Add the pork and stir fry for 2 minutes.
4. Add the bok choy, capsicum, and mushrooms and stir-fry until the bok choy is just wilted.
5. Add the remaining sauce mixture with the water and noodles and cook for another 2 minutes.
6. Toss the sliced spring onions and fresh coriander through the noodles just before serving.
