Recipe: Flourless chocolate walnut slice

This chocolate brownie is studded with deliciously crunchy chunks of walnut. It’s gluten-free, so if you or anyone you’re baking for can’t tolerate gluten, then you can give them a gorgeous treat with this one.

Flourless chocolate walnut slice

Makes 9 pieces

Ingredients

150g dark chocolate

90g unsalted butter

Pinch of salt

140g brown sugar

1 tsp vanilla essence

2 size 7 eggs

70g ground almonds

60g rice flour

75g walnuts (reserve some for topping)

Method

1. Preheat the oven to 190C. Grease and line a 20cm square baking tin with baking paper.
2. Melt the butter and chocolate together in the microwave, stirring at intervals until smooth. Let cool for 5 minutes.
3. Add the sugar, eggs and vanilla, mixing until smooth and well combined.
4. Fold in the rice flour, ground almonds and two-thirds of the walnuts until just combined.
5. Pour the batter into the prepared tin and smooth the top.
6. Sprinkle the remaining walnuts over the top and bake at 180C for 25 minutes.
7. Let cool in the tin for 20-25 minutes, then transfer to a wire rack to cool completely.
8. Once cooled, cut into 9 slices and enjoy.
