Ingredients
| 2 | Kumara, Peeled and chopped |
| 3 ½ Tbsp | Avocado oil, or melted coconut oil |
| 1 ½ tsp | Salt |
| 1 tsp | Paprika |
| 1 pinch | Black pepper, and/or Cayenne Pepper |
| 2 cups | Cherry tomatoes, Whole or sliced |
| 2 bags | Taylor Farm Buffalo Ranch Chopped Kit |
| 1 | Avocado and Lime Slices, To serve, Optional |
Directions
Heat oven to 200C.
Place Kumara on a large baking sheet. Drizzle with oil and sprinkle with seasonings. Toss to coat evenly and spread into a single layer. Bake for 10–15 minutes. Remove pan from the oven and flip Kumara.
