You can pretty much use any pasta shape you have on hand for this dish – keeping it fun for the kids makes mealtimes a little easier!
Ingredients
4 | London Pride sausages, skins removed |
250 g | Orecchiette pasta |
20 | Cherry tomatoes, assorted shaped and coloured |
2 | Courgettes, grated |
100 g | Feta cheese, sheep's is lovely and sweet |
3 sprigs | Fresh basil, leaves removed and torn |
½ | Lemons, zest and juice |
1 drizzle | Olive oil |
1 sprinkle | Salt and pepper |
Directions
- Start by bringing a large pot of water to the boil. Add a good pinch of salt and then the pasta. Cook according to the packets instructions, drain and place back into the pot stirring through a generous splash of olive oil.
- In a large fry pan over medium heat fry off the sausage meat in a little olive oil breaking it up with the end of a wooden spoon into bite size pieces. Allow the meat to become golden, crispy and thoroughly cooked before adding it into the pasta along with any pan juices.
- Cut the cherry tomatoes into halves and thirds various ways and add them to the drained pasta. Now add the courgettes, lemon zest and juice, half the feta crumbled in and season well.
- Place into serving bowls or onto a platter and finish by crumbling the remaining feta over the top, scattering the basil leaves and a final drizzle of olive oil.
