Ingredients
| 2 | Agria potatoes, cooked and mashed |
| 1 | Egg, lightly beaten |
| 2 tsp | Maille Dijon Mustard (Main) |
| 120 g | Courgettes, finely chopped |
| 87 g | Grated carrot |
| 2 Tbsp | Extra virgin olive oil |
| 1 dash | Salt & freshly ground pepper |
| 2 Tbsp | Maille Aioli Sauce, to serve |
Directions
1.Combine potatoes, egg and Maille Dijon Mustard in medium bowl. Stir in courgettes, carrots, salt and pepper. Shape into 2.5cm patties and chill for at least 1 hour.
2.Heat Olive Oil in large skillet over medium-high heat and cook fritters, turning once, until golden brown, about 10 minutes;
