Super easy barbeque recipe that everyone loves. Enjoy the taste of this mighty summer veggie trio, aubergine, courgette and tomato stacked with the tender juicy pork. Good quality extra virgin olive oil makes the magic! Just delicious.
Ingredients
500 g | Apple Tree Farms Pork Fillets, sliced in thin (1cm) pieces (Main) |
1 | Aubergine, sliced |
2 | Courgettes, sliced |
6 | Tomatoes, sliced |
2 | Oranges, sliced |
¼ cup | Olivado Extra Virgin Olive Oil |
1 pinch | Salt and pepper, to taste |
1 small handful | Superb Herb Basil, to garnish |
Directions
- Heat the barbeque to medium high. Lay pork pieces, vegetable and orange pieces on a large tray in a single layer. Drizzle olive oil all over and season with salt & pepper. Make sure ingredients are well coated with the oil.
- Cook the meat, vegetables and orange on the barbeque for 7-8 minutes each side.
- Serve meat and vegetables and orange stack together with crusty bread and condiments of your choice.
