Ingredients
8 | Potatoes, cooked and diced (Main) |
1 cup | Mayonnaise (Main) |
1 Tbsp | American mustard |
1 pinch | Salt and pepper |
½ | BBQ Chicken, bones removed, shredded |
1 | Avocado, flesh diced (Main) |
¼ cup | Chopped chives |
Directions
- Place the potato salad in a large bowl, mix in mustard, mayonnaise and salt and pepper
- Add the chicken and avocado and gently toss to combine.
- Divide evenly among serving plates.
- Sprinkle with chives and serve immediately.
