Ingredients
| 800 g | White beans, drained (Main) |
| 400 g | Canned tomatoes (Main) |
| 1 Tbsp | Tomato paste |
| ½ cup | Vegetable stock, or water |
| 1 | Red onion, thinly sliced |
| 2 | Bay leaves |
| 1 to taste | Salt & freshly ground pepper |
| 1 Tbsp | Olive oil |
| 1 cup | Peas, (frozen) (Main) |
| 150 g | Feta (Main) |
Directions
- Preheat oven to 180C. Pour the beans into a baking dish. Roughly chop the tomatoes and add with the juice.
- Mix the paste and stock together and add with the onion, bay leaves, seasoning and olive oil.
- Bake for 30 minutes then scatter with peas and return to the oven for a further 10 minutes. Crumble over the feta before serving.
