Ingredients
| 1 Tbsp | Olive oil |
| 8 | Pork sausages, choose quality ones or good beef sausages (Main) |
| 2 medium | Red onions, cut into eighths |
| 2 | Apples, cored and cut into wedges |
| 1 | Garlic bulb, cut in half crosswise |
| ½ cup | Marmalade |
| ½ cup | Apple juice, or use white wine (Main) |
| 1 Tbsp | Prepared mustard |
| 3 Tbsp | Balsamic vinegar, or cider vinegar |
Directions
- Preheat the oven to 220C.
- Brush a large baking pan with the olive oil. Prick the sausages with a thin skewer. Place in the baking tray with the onions, apples and garlic. Season.
- Combine the marmalade, apple juice or wine, mustard and vinegar. Pour evenly over the sausage combo. Bake for 20 minutes or until the sausages are cooked. Baste occasionally.
- Asparagus or broccolini could be added during the last 5 minutes of cooking.
