Fresh wonderful flavours and a Big hit with all those who get to try. Wonderful for BBQ's, Party's, Christmas, you name your event!
Ingredients
| 1 ½ cups | Flour |
| 1 tsp | Baking powder |
| ¼ cup | Cornmeal |
| 2 | Eggs |
| 1 ¼ cups | Milk |
| 1 | Chilli, finely chopped |
| ½ tsp | Paprika |
| 1 tsp | Ground cumin |
| ¼ cup | Fresh coriander, chopped |
| 1 | Spring onion |
| 4 Tbsp | Red peppers, chopped |
| ¼ cup | Corn kernels |
| 1 pinch | Salt & freshly ground pepper |
| 1 serving | Mixed seafood |
| 1 serving | Oil, for frying |
| 1 medium | Onion, diced |
| 3 Tbsp | Fresh dill, or fennel, chopped |
| 300 g | Cooked mussels, meat only, chopped (Main) |
Directions
- To prepare the fritter mixture, mix together the first five ingredients and beat vigorously. Add remaining fritter ingredients, season and mix well.
- Sauté onion in 1 tbsp oil and add dill or fennel and mussel meat. Mix well into fritter mixture. Fry in spoonfuls in pan or directly on your BBQ hot plate.
- Enjoy with your own special sauce, ie sweet n sour Thai or lemon Aioli with lemon wedges. Sprinkle with parsley or more fresh chopped dill ......... YUM!
