Warren Elwin serves up pears poached in dessert wine, vanilla and star anise.
|375 ml||Dessert wine|
|¼ cup||Caster sugar|
|½||Vanilla beans, pod|
|1||Orange, juice and peeled zest|
|4||Pears, ripe yet firm, peeled (Main)|

- In a saucepan heat the wine, water, caster sugar, vanilla bean pod, star anise and the orange juice and zest.
- Add the peeled pears and simmer gently (turning occasionally) until they are knife-tender, about 10-15 minutes.
- Remove from heat and cool in the syrup.
- Serve warm or cold.
