Warren Elwin serves up pears poached in dessert wine, vanilla and star anise.
Ingredients
375 ml | Dessert wine |
1 cup | Water |
¼ cup | Caster sugar |
½ | Vanilla beans, pod |
2 | Star anise |
1 | Orange, juice and peeled zest |
4 | Pears, ripe yet firm, peeled (Main) |
Directions
- In a saucepan heat the wine, water, caster sugar, vanilla bean pod, star anise and the orange juice and zest.
- Add the peeled pears and simmer gently (turning occasionally) until they are knife-tender, about 10-15 minutes.
- Remove from heat and cool in the syrup.
- Serve warm or cold.
