I bought a large variety of tomatoes at the La Cigale market (in Parnell, Auckland). They simply need tossing in a large bowl with a few other ingredients to make this light and tasty salad. My super-sprouts came with edible flowers through the mix, but they can be sourced separately. Everything in this salad was found at the market.
For the salad
400 g | Tomatoes, mixed varieties e.g. black, cherry, yellow (Main) |
½ cup | Black olives |
½ cup | Sprouts |
100 g | Mozzarella cheese, torn |
¼ cup | Edible flowers |
1 to taste | Sea salt and cracked black pepper |
For the dressing
2 Tbsp | Olive oil |
1 tsp | White vinegar |
1 tsp | Honey |
Directions
- Place the tomatoes in a large bowl, cutting in halves or quarters if they are large. Add olives and sprouts.
- Mix all the ingredients for the dressing and toss through salad. Place on a platter.
- Add mozzarella and sprinkle edible flowers over. Sprinkle with sea salt and pepper.
