We love a really fresh ceviche so lots of lime juice is required for this one. We serve this on corn chips which are a great way to serve ceviche at a party. The added crunch goes really nicely to add a different texture to the dish.

- Thinly slice the snapper into strips and mix with lime juice in a bowl. Place in the fridge and marinate for 2 hours.
- Strain off some of the lime juice and stir through the coconut cream. Add all other ingredients except the corn chips. Season generously with salt.
- Lay out the corn chips and place a spoonful of the ceviche on top and finish by garnishing with some fresh coriander. These are great as a party snack. Alternatively, serve the ceviche in a bowl and scoop it out with corn chips.
