I have adapted this recipe from Annabel Langbein’s Simple Pleasures cookbook by adding a few extra ingredients that remind me of India.
Ingredients
| 500 g | Chicken mince, use lean mince (Main) |
| 1 handful | Fresh coriander, finely chopped |
| 2 | Spring onions, finely chopped |
| 1 | Lemon, or lime, freshly zested |
| 3 tsp | Sweet chilli sauce |
| 1 tsp | Curry powder |
| 1 | Egg, white only |
| ¼ cup | Coconut cream |
| ½ cup | Panko breadcrumbs |
| 1 to fry | Canola oil |
| 4 | Burger buns, of your choice |
Mango salsa
| 1 | Mango, peeled and sliced |
| 1 Tbsp | Sweet chilli sauce |
| 1 Tbsp | Lime juice, or lemon juice |
| 1 Tbsp | Fresh coriander, chopped |
| ½ | Red onions, finely chopped |
Directions
- Mix the first 8 ingredients together and season with salt and pepper. Add breadcrumbs in so that the mix is easily shaped into patties.
- Make 4 burger patties out of the mixture. Heat oil and fry the patties for 3-4 minutes on each side until the chicken is cooked through.
- Serve in lightly toasted buns with mango salsa (below) or your favourite condiments.
Mango salsa
Mix all the ingredients together, season and serve in your burgers.
