The kids are loving Te Atatu Toasted’s Coco Crunchies and we don’t mind serving them because founder Clare Robinson is ensuring, as she does with all of her cereal range, that they have no additives, sulphites, emulsifiers or preservatives.
They contain less than half the sugar found in other cereals aimed at kids and are gluten-free and low GI. Each of the four ingredients — organic buckwheat, coconut oil, coconut sugar and dutch cocoa — is rich in vitamins and minerals, including vitamin B, P and E and potassium, zinc, iron, calcium, magnesium, copper and selenium. They also help to make chocolate crackles — my childhood favourite — a healthier sweet treat.
Te Atatu Toasted is available at good supermarkets and speciality food stores, or online at teatatutoasted.co.nz
Ingredients
2 Tbsp | Honey |
¼ cup | Virgin cold pressed coconut oil |
300 g | Te Atatu Toasted Coco Crunchies (Main) |
Directions
- Heat the honey and coconut oil in a pot and let it boil for 5 minutes.
- Stir this mix through the coco crunchies and press into a lined 20 x 20cm tin.
- Run the back of a spoon over it to ensure it is pressed in well.
- Place in fridge to set (or the freezer if you're in a hurry) and store in the fridge. I find this easier to slice if you do so before it sets too firmly. You could also spoon this into paper cases.
