Ingredients
| 500 g | Tomatoes, diced |
| 500 g | Courgettes (Main) |
| 1 | Onion, diced |
| 2 | Granny Smith apples, cored, peeled and diced |
| 4 | Garlic cloves, diced |
| 1 Tbsp | Fresh ginger |
| 1 Tbsp | Yellow mustard seeds |
| 2 tsp | Mixed spice, (ground) |
| 1 tsp | Salt |
| 250 g | Brown sugar |
| 350 ml | White wine vinegar |
Directions
- Place all the ingredients in a large, heavy-based stainless-steel saucepan.
- Slowly bring to the boil, stirring often. Simmer for about 45 minutes or until thick.
- Pour into hot, sterilised jars and seal.
- Makes about 5 cups.
