Spread this seasonal cheer on anything that needs to be buttered. Pikelets and pancakes, gems and gingerbreads will love you for it. You can even rub it into fresh sweetcorn.
|50 g||Dried cranberries, chopped|
|1 splash||Gin, or rum|
|200 g||Butter (Main)|
|50 g||Pecans, walnuts or pistachios, chopped|
|1||Orange, zest of|
|2 cm||Fresh ginger, finely grated|
|1 tsp||Christmas spice, see method below|
|1 handful||Edible flower, petals|

- Cover the cranberries with gin or rum and leave to soften.
- Chop the butter into a bowl. Add the cranberries, liquor, pecans, orange zest, ginger, Christmas spice (seerecipe) and flower petals.
- Whip together well, then roll into baking paper and twist to form a Christmas cracker. Refrigerate to store.
