This salsa is perfect with grilled fish or barbecued prawns or seafood fritters.
Ingredients
1 | Red capsicum |
3 | Mini cucumbers |
1 | Red onion, diced small |
1 tsp | Salt |
1 tsp | Sugar |
1 | Chilli pepper, finely chopped |
1 Tbsp | Ginger, finely grated |
1 splash | Fish sauce |
1 | Lime, zest and juice |
1 handful | Mint, and coriander, chopped |
1 | Banana, or 2 |
Directions
- Chop red capsicum, mini cucumbers and red onion into small dice.
- Add salt and sugar and set aside for 5-10 minutes.
- Drain off the liquid, add finely chopped chilli, finely grated ginger, the zest and juice of a lime, a splash of fish sauce and mint and coriander. Toss and taste for seasoning.
- Just before serving chop 1-2 bananas into same sized dice and toss through the salsa.
