Waffle ingredients
2 cups self-raising flour
1/2 tsp salt
1/2 cup parmesan, finely grated
2 eggs, separated
1 1/2 cups milk
1/3 cup cooking oil, plus extra for waffle iron
Sandwich ingredients
Cooking oil, for frying
4 beef patties
250g thick-cut bacon
200g halloumi, cut into thick slices
4 eggs, separated
salt and pepper, to taste
1 avocado, mashed
1 cup crazy peas
Method
- Make the waffles. Sift flour and salt into a large bowl. Add the grated parmesan and mix well.
- In a separate bowl whisk the egg yolks, milk and oil together. Pour into dry ingredients and mix well.
- Beat the egg whites until stiff, then fold into the batter.
- Preheat the waffle iron and grease with oil if necessary.
- Ladle in waffle mix and cook as per the waffle iron’s instructions. Set the waffles aside.
- Sandwich: Heat the barbecue or a frying pan to medium heat. Liberally drizzle with oil.
- Cook the beef patties and bacon for 5 minutes, then turn and cook for another 5 minutes. Remove bacon and finish cooking patties until fully cooked through, about another 5 minutes, then remove the patties.
- Crack the eggs onto the barbecue or into the frying pan and season with salt and pepper. Add the halloumi slices and fry to your liking.
- Load up the waffles with mashed avocado, crazy peas, halloumi, a beef patty, bacon and a fried egg. If you’re up to it, top with another waffle. Serve with your favourite brunch beverage.
