Warm red cabbage, goat cheese and walnut salad. Photo / Babiche Martens
Serves 4
100g soft goat's cheese 2 Tbs chives, finely chopped 2 Tbs walnut oil 1 Tbs red onion, very finely sliced 1Tbs olive oil 200g red cabbage, finely sliced 1 Granny Smith apple, quartered and finely sliced 40g walnuts, toasted then chopped 1 Tbs walnut oil 1 Tbs balsamic vinegar Salt and freshly ground black vinegar
1 Crumble thecheese into a bowl. Add the chives, walnut oil and red onion.
2 Heat the olive oil in a pan then when hot, add the cabbage, apples and walnuts. Stir for 5 minutes then reduce the heat and add the walnut oil, balsamic and seasoning.
3 Simmer for two minutes, then add all the ingredients together and serve warm.
