Cook now when tomatoes are ripe and sweet.
1. Dice tomatoes into small pieces and cook off gently in a generous amount of olive oil.
2. Finely dice a red chilli and add to the tomatoes.
3. Just before serving, tear some fresh basil leaves and toss through the sauce.
4. Taste and season. A teaspoon of sugar can make the tomatoes even sweeter and cracked pepper is a must. Serve with a fine pasta.
