4 brioche buns
250g streaky bacon rashers
1/2 red onion, thinly sliced
2 tbsp white vinegar

1 tsp sugar
4 gherkins, thinly sliced
110g blue cheese
4 iceberg lettuce leaves
Barbecue sauce
Method
- Preheat the oven. Cook the beef burger patties according to the packet instructions. Slide in a tray of bacon to cook in the oven towards the end of burger cooking time, so that burgers and bacon are cooked at the same time.
- Meanwhile, mix white vinegar and sugar in a small bowl. Add red onion slices to the marinade.
- Slice burger buns and warm in the oven just before assembly.
- To assemble the burger, spread a little bit of your favourite barbecue sauce on the bottom bun, then place lettuce on top. Top with pickled onions, barbecue burger patty, and crumbled blue cheese. Drizzle with more barbecue sauce and place the bacon and gherkins on top. Finish with the top burger bun.
- Enjoy straight away.
