Serves 4
2 cups diced cucumber
2 cups diced pineapple
3 limes, zested and juiced
1 Tbs toasted sesame seeds
2 Tbs fresh mint leaves, shredded
Dressing
2 Tbs coconut cream
1/2 Tbs lime juice
1 Tsp palm sugar, grated
1 tsp fish sauce
1 tsp sesame sauce
1 Tbs water
1 Put the cucumber and pineapple into a bowl.
2 Add the lime juice and zest, then the sesame seeds and fresh mint leaves. Stir to combine.
3 To make the dressing, put all the ingredients into a bowl over a saucepan of simmering water.
4 Gently stir until the sugar has melted and the flavours have combined, then spoon over the salad with extra sesame seeds and mint leaves to garnish.
