5 dried chillies, chopped and soaked
1 tsp sea salt
1 tbsp galangal, finely sliced
3 tbsp shallots, finely chopped
1 tsp shrimp paste
5 cloves garlic, whole
75g pork mince
Handful coriander, chopped
1 cup tomatoes, sliced
2 tbsp high-heat cooking oil
3 cloves garlic, peeled and chopped
3 tbsp water
2 tbsp sugar

1 In a small food processor bowl, blitz the chillies, shallots, galangal, salt, garlic and shrimp paste.

2 Tip out into a glass mixing bowl, work in the pork mince and coriander.

3 In a wok, heat the cooking oil. Add the pork mixture, then add 3 tbsp water and 2 tbsp sugar.

4 Stir occasionally for five minutes, add the tomatoes, continue to cook for 10 minutes.

5 Remove from the heat and transfer to a bowl to cool.
