Serves 4
1 Lebanese cucumber
2 tsp salt
1 tsp sugar
1 tsp fresh dill, chopped
1 tsp fresh mint, chopped
16 mussels
3 tomatoes
Basil
Olive oil
1 Thinly slice the cucumber. Place on a plate and scatter with the salt, sugar, dill and mint. Leave to cure for 2 hours then pat dry before serving
