1 cup vegetable stock
1/2 cup cream
200g mascarpone
2 cups washed and chopped spinach
3 slices white bread
Olive oil
100g freshly grated parmesan
1 Tbsp finely chopped parsley
Salt and freshly ground pepper
200g macaroni
1. Preheat oven to 180C and butter oven dish. Cook macaroni according to packet instructions.
2. In a largebowl mix together stock, cream, mascarpone and spinach, season then add macaroni and place in oven dish.
3. In bowl of food processor, combine bread, parsley and parmesan. While motor is running, drizzle in olive oil until breadcrumbs are formed. Scatter over macaroni and bake 20 minutes or until golden.
