Amanda Laird: Fruit with rose syrup

Serves 4

Syrup

1 1/2 cup rose wine
1/2 cup caster sugar
1/4 cup rose petals or dried buds

Fruit

2 kiwifruit
1 granny smith apple
1 small pawpaw
1 small pineapple
Zest and juice of 1 lime

1. Place syrup ingredients in a small saucepan, stir and let simmer for approximately 25 minutes until slightly thick, cool.

2. Peel the kiwifruit and dice. Core and dice the granny smith. Slice the pawpaw, remove the seeds and skin then dice. Peel and remove the core from the pineapple and dice.

3. Combine all fruit with the zest and juice of the lime and serve with the syrup poured over, garnished with the petals or buds.
