Comfort food par excellence, chorizo baked beans is a dish that can be rustled up in no time, and is great served with sour cream and warm crusty bread.
Serves 2 generously
2 chorizo sausages, sliced
1 small onion, diced
2 cloves garlic, sliced
1 red chilli, sliced
2 Tbs tomato puree
1 Tbs golden syrup
1/2 Tbs Worcestershire sauce
1/2 Tbs red wine vinegar
1 240g tin cannellini beans, drained
1 240g tin borlotti beans, drained
1 240g tin crushed tomatoes
1 bay leaf
2 sprigs of thyme
Sea salt and freshly ground black pepper
1. Preheat oven to 180C. Combine all ingredients, season and bake covered with baking paper for 30 minutes.
2. Remove the paper and continue cooking for another 15 minutes. Serve with sour cream and warm crusty bread.
