This simple lemon slice is perfect for a mid-afternoon pick-me-up or after-school snack. Video / Fresh Media

This zesty slice doesn’t require any baking.

Back to school, back to office, back to routine … sometimes you just need a quick solution for lunchboxes or after-school treats. This deliciously zesty slice can be put together in just minutes and you don’t even need to turn the oven on. It’s so simple you can hand this one over to the kids to make.

Easy lemon slice

Serves 8

250g wine biscuits

1 cup desiccated coconut

1 lemon, zest only (save the juice for icing)

120g butter

1/2 cup sweetened condensed milk

Lemon icing:

40g butter, melted

2 cups icing sugar

1 lemon, juice only

Method

  1. Grease and line a 17 x 27cm slice tin with baking paper, leaving an overhang on all sides. Place the biscuits in a food processor and process them to form fine crumbs.
  2. Transfer the mixture to a bowl, then combine with coconut and finely grated zest of 1 lemon. Place the butter in a small saucepan over medium heat to melt. Stir in the condensed milk. Pour the melted mixture over the dry ingredients and stir to combine well.
  3. Press the biscuit mixture into the prepared tin and refrigerate for one hour or until firm. When set, ice with lemon icing.
  4. To make lemon icing, sift the icing sugar in a bowl. Add melted butter and lemon juice and beat until smooth.

NOTE:

Try placing the unopened can of condensed milk in a bowl of hot water for a few minutes before opening – it will be much easier to pour out.
