Sushi, burrito or beef burger? This recipe merges all three. Inspired by chef Peter Yen’s ‘sushiritto’, this iteration adds the elements of a beef burger to the mix.
The sushiritto, or sushi burrito, was created by chef Peter Yen for his San Francisco restaurant. It melds Japanese and Mexican cuisine,with the sushi amped up into a burrito-size roll and some very non-traditional fillings.
Prepare the sushi rice:Cook rice in a rice cooker. When the rice is cooked, sprinkle the sushi vinegar while hot and mix thoroughly. Add sesame seeds and mix. Let cool.
Cook the beef burger patties according to the packet instructions and slice them into strips.
Lay a piece of plastic film (or baking paper) over the sushi mat. Place the nori sheet on top of it, shiny-side down. Spread rice over the nori, leaving a 1cm border at the top.
Place a lettuce leaf in the middle of the rice. Arrange the burger pieces in a line, top with cheese, and a little chilli oil if you are using it. Arrange the avocado, capsicum, carrot, and coriander along with the burgers. Drizzle mayonnaise over the fillings.
Fold in both sides of the nori sheet, then use the sushi mat to help roll. Slice in half to serve straight away, or pack for a lunch on the go.
Afterword
You can buy sushi mats at most supermarkets but, if you don’t have one, you can place a piece of plastic film on a hand towel and roll the sushiritto on that.
