Soften vanilla icecream, stir through Christmas mincemeat and re-freeze (use a round-edged loaf tin lined with cling film). Serve in pretty slices with summer berries. For real decadence, mix with golden syrup icecream. Serve layered with shortbread biscuits.
Spread a "sausage" of mincemeat on to wonton wrappers, roll up and pinch the ends like crackers and deep fry. Serve dusted with icing sugar.
East meets west
Make a messy Christmas version of baklava, with layers of buttery filo pastry and mincemeat, drenched in a honey syrup. Or wrap filo around the mincemeat into moneybags.
