The pairing of watermelon and feta makes for a delicious combination in this salad.
Ingredients
8 | Snow peas |
2 kgs | Watermelon |
¼ cup | Almond flakes, (lightly toasted) |
200 g | Feta |
1 | Fresh mint, (sliced or torn) |
1 Tbsp | Extra virgin olive oil |
2 ½ tsp | Vinegar, (champagne) |
1 | Black pepper |
Directions
- Remove the rind then cube the watermelon.
- Slice the snowpeas finely then arrange on a platter with the toasted almonds.
- Crumble over the feta, then the mint.
- Sprinkle with the vinegar and drizzle over the olive oil. Add a little freshly ground black pepper to the dish before serving.
