Kids can be encouraged into the kitchen to cook something they really enjoy eating - like dessert! This pudding for starter cooks is our family favourite. We nicknamed it “icecream pudding”. When it’s straight from the fridge it tastes just like icecream. I hope you agree.
Ingredients
| 500 ml | Milk, full cream | 
| 50 g | Butter, softened | 
| 2 Tbsp | Caster sugar, plus 2 Tbsp for sprinkling | 
| 2 | Eggs | 
| 1 Tbsp | Flour | 
| 1 tsp | Vanilla extract | 
Directions
- Pour milk into a heavy-based saucepan and heat until just below boiling point.
 - In a bowl, cream the butter and sugar until light and fluffy. Beat in the eggs, one at a time, beating well between each addition. Sift in flour and mix to combine.
 - Pour on the hot milk, then the vanilla extract and mix well. Return to the washed saucepan and place over a low heat. Cook, stirring continuously until the mixture thickens, but does not boil or it will curdle a little.
 - Pour into a serving bowl and sprinkle the top with extra caster sugar to prevent a skin forming. Serve warm or cold with cooked or raw fruit and icecream. Add a sprinkle of cinnamon if you wish.
