Step up your regular toasted sandwich, adding as many ingredients as you like.
Ingredients
| 1 | Eggplant |
| 1 to drizzle | Olive oil |
| 1 loaf | Turkish pide, (or use foccacia) |
| 1 serving | Tomatoes |
| 1 to spread | Hummus |
| 1 handful | Basil |
| 1 to garnish | Greek yoghurt |
| 1 serving | Mozzarella cheese, (sliced thinly) |
| 1 to taste | Salt & freshly ground pepper |
Directions
- Heat a panini machine or sandwich press. Slice the eggplant and brush all sides with olive oil. Put in the machine and press, cooking until golden.
- Slice the bread lengthwise and brush with olive oil. Spread one side with hummus, lay over the eggplant then add as many ingredients as you fancy.
- Add dollops of yoghurt and finish with thin slices of mozzarella before seasoning then top with the bread, cut in half if necessary and press in the machine until golden.
