In this recipe, as with most meatloaves, egg is used as the binding agent. If preferred, milk powder or soy flour could be used instead. About 1 tablespoon of milk powder is required to bind 500g of meat. Add chopped jalapenos, if preferred.
Ingredients
| 1 kg | Lean minced beef (Main) |
| 1 cup | White breadcrumbs, soft |
| 1 medium | Onion, finely diced |
| 1 small | Green capsicum, seeded and diced |
| ½ cup | Frozen corn, thawed (Main) |
| 1 | Egg, lightly beaten |
| 2 | Garlic cloves, crushed |
| ½ tsp | Chilli powder, use up to 1 tsp |
| 1 tsp | Ground cumin |
Directions
- Preheat the oven to 180C. Line a roasting pan with baking paper.
- Combine all the ingredients, season with salt and pepper and shape into a 25cm x 10cm loaf. Place in the pan.
- Bake for 1 hour or until cooked. Great served with a tomato salsa.
