Ingredients
| 1 Tbsp | Mayonnaise |
| ½ cup | Tuna in spring water (Main) |
| 1 tsp | Dijon mustard |
| 1 tsp | Tarragon, finely chopped |
| 2 tsp | Flat leaf (Italian) parsley, finely chopped |
| 1 to taste | Salt & freshly ground pepper |
| 3 tsp | Spring onions, finely chopped |
| 2 | Ciabatta bread, rolls |
| 1 to serve | Butter |
| 1 to serve | Tomato, sliced |
| 1 to serve | Spinach leaves |
| 1 to serve | Cheddar cheese, sliced |
Directions
- In a bowl, mix together the mayonnaise, tuna, mustard, tarragon, parsley and spring onion. Season.
- Preheat oven to 200C. Slice the rolls and spread with butter. Fill the rolls generously with spinach leaves, slices of tomato, the tuna mixture and cheese.
- Place on a tray and bake for 10-15 minutes or until the cheese has melted.
