For the base
6 | Tamarillos, use up to 8 (Main) |
4 Tbsp | Brown sugar |
¼ tsp | Chinese five spice |
For the topping
2 | Large eggs |
½ cup | Sugar |
¾ cup | Plain flour |
½ tsp | Baking powder |
½ tsp | Ground ginger |
¼ cup | Milk |
25 g | Butter, melted |

Directions
- Preheat the oven to 180°C.
- Peel and slice the tamarillos and place in the base of a 26cm x 17cm ovenproof dish.
- Combine brown sugar and five-spice and sprinkle over the tamarillos. Place in the oven for 15 minutes.
- Meanwhile, beat the eggs and sugar together until pale and creamy. Sift in the combined flour, baking powder and ginger. Mix in the milk and butter. Remove the hot fruit from the oven and pour the sponge mixture evenly over the top. Return to the oven and cook for 15 minutes until the sponge is golden and cooked.
